Chocolate Jalapeño Omelette

Ingredients
  • 4 eggs
  • 1 jalapeño pepper
  • 2 tbsp cocoa powder
  • 2 tbsp chocolate buttons
  • 6 strawberries, sliced
Preparation (Serves 2)
  1. Preheat broiler
  2. Wearing disposable gloves, remove stem from jalapeño and slice lengthwise. Scrape out the seeds (unless you really like spicy foods, then leave them in, but they are really potent!). Place pepper on aluminum foil lined pan and place in oven 3-4 inches from the flames. Roast for 3-4 minutes till charred and blistered (skin mostly black with just a few green spots. Place pepper on cutting board and invert a bowl over it. Allow it to stem for 15-20 minutes under the bowl. Remove the bowl and peel the charred skin from the pepper. Chop to desired consistency.
  3. Whisk together the eggs and drinking chocolate until powder is completely dissolved.
  4. Stir in chopped jalapeño.
  5. Warm a non-stick pan and pour egg mix straight in and cook for 3-4 minutes.
  6. Sprinkle on the chocolate buttons and place under broiler until the buttons are melted.
  7. Slice in half and place each half on a separate plate.
  8. Fan sliced strawberries on top of omelettes and serve.
Note: The Raspberry Chipotle Sauce (July 19 recipe) is fantastic on these.
